Overground rather than Underground because the wines in this collection are a tad less ‘out there’ than the Barrel-less Tannat and Elisa’s Dreams Tannat, both of which are a bit bonkers. The winemaking is relatively conventional, but the wines are far from boring.
Must maceration takes place in small stainless steel tanks for about five days, capturing the fresh fruit aromas and flavours, with a combination of lots in wild-only and selected yeasts.
Pumping over and punching down is undertaken by hand and after fermentation, pressing, settling and racking, the wine is moved into second use barrels, mainly French with a few American, for about 6 months.
The wine is very lightly filtered prior to bottling and retains the wonderful, dark energy so cherished when Tannat is at its best. A powerful wine with smoky, meaty, plumy aromas and big licks of black fruit and spice in the mouth. Benchmark stuff.
